A Fresh Chapter for a Local Legacy: The Transformation of Penso’s Pizza

When you walk into Penso’s Pizza, you’re not just stepping into a restaurant, you’re stepping into nearly a century of tradition. Serving the Dover community since the 1930s, Penso’s has become a local staple, known not only for its pizza, but for the generations of family behind it.
When we were brought in to reimagine the space, the goal was clear: refresh the environment while honoring the history that makes Penso’s so special.
Back Open in a Flash
One of the most unique parts of this project was the timeline. With a goal to reopen as quickly as possible, this became one of the fastest projects we’ve completed, wrapping up the on-site work in about a week.
Every decision was made with efficiency in mind, without sacrificing the quality and detail that the space deserved. The result is a transformation that feels intentional, cohesive, and ready to welcome customers back in almost immediately.


Designing with an Old-World Feel

From the start, we wanted the space to reflect an old-world pizza shop vibe, something that felt warm, inviting, and rooted in tradition. This wasn’t about creating something trendy or overdone, but rather enhancing the character that was already there.
The updated design leans into that timeless feel, creating an atmosphere that matches the history behind the brand while still feeling fresh and elevated.
Where the Magic Happens
One of the most important elements of this redesign was highlighting the pizza-making process. At a place like Penso’s, the craftsmanship behind each pizza is part of the experience.
We focused on creating better visibility into the prep areas, allowing customers to feel more connected to what’s happening behind the scenes. It adds an extra layer of authenticity and energy to the space.
Built to Work Better
Functionality was just as important as aesthetics. With a busy, high-volume kitchen, we worked to improve storage and workflow throughout the space.
A key feature was the addition of a custom-built dough cabinet, designed specifically to hold and organize dough before it’s rolled out. This not only improves efficiency for the team but keeps everything clean, accessible, and consistent.

We also incorporated better storage solutions for essential tools like pizza peels, ensuring everything has a designated place while still being easy to grab during busy hours.
More Than Just Pizza
Penso’s has a strong following, so it was important to create a dedicated area for merchandise display—giving customers a way to take a piece of the brand home with them.


On the dining side, we introduced custom-built booths to elevate the dine-in experience. These add comfort, character, and a more defined sense of space, making it a place where people want to sit, stay, and enjoy.


Honoring the Past, Built for the Future
This project was all about balance—respecting the legacy of a long-standing, family-owned business while creating a space that works better for today.
From the fast-paced timeline to the thoughtful design details, this transformation was built around keeping Penso’s moving forward without losing what makes it special.
Because at the end of the day, it’s not just about the space—it’s about the people, the process, and the tradition that continues with every slice.
